I put a Butt on last night at 11PM for a pre 4th of July party today. Started at 160 and then when I got up this morning at 6 raised to 225. Will wrap shortly
I did inject with a beef broth mixture. Just disappointed in results as I have seen many pictures of a juicy brisket slice. Will keep trying until I get it. Thanks!
Yes. Only sliced what was need. Luckily there was a lot of juice so I use that on our sandwiches but a s we went for seconds the slices were really dry
I smoked a flat overnight. Smoked at 180 for 13 hours, hit 165 and covered till it hit 205. I kept the flat in heavy duty tin foil and then wrapped in towels and placed in cooler for a few hours. Plenty of juice when I open and slice. Great bark and flavor but after slicing flat became dried...
Need to smoke an 8 lb boston butt for tomorrow to serve at noon. I was think of smoking overnight on my traeger. I was thinking of smoking at 180, put on at 11PM and then when I get up at 6 to increase to 225. Do you think there is a chance it could be down around 11AM?

Just purchased my first Snake River Farms pork shoulder for a 4th of July smoke. It is 19 pounds!. I have only smoked 6-8 pound boston butts. Any ideas on how long of a smoke for this if I smoke at 225-250? Has anyone ever smoked a SNF shoulder before? Ideas on injecting?
