    So, the flat seems tender at right around 200. But the point is not. Put the flat to rest, and cube up the point with sauce and put it back in the smoker to make burnt ends? Does that sound right? Do burnt ends need to rest as long as a brisket that is not cut up?

    Hi all, so temp is around 190 now, and it's 1:08 in the afternoon. If I am trying to eat around 4:15, should I take it off earlier than 204, since it will continue to cook for longer when I put it in a cooler to rest for so long?

    Thanks very much for the advice. Flat temp is now at 165 degrees, 9 hrs 20 mins in. Does this sound OK? Based on this, what's your estimate on how much longer I have to go? Just trying to plan meal time a little bit. I will monitor to the temp you guys suggest.

    New owner, what should I read?

    Yes, I bought the one that came pre-loaded with pellets. I was using a propane torch, probably held it there for 40 seconds. A flame would start, but then go out quickly. I guess next time I will try putting them in the smoker for the warmup period.
