    I switched to the VSU bags several years ago and I think they work much better. I had one of the cheaper sealers when I started using them and they sealed fine for me I have since bought a better sealer from Lisa and it works better and faster, I don't have to sit and wait for the sealer to cool...

    Al I smoke them to about 140 and have the oil at 350 and drop it in. When you take it out of the smoker make sure to drain any liquid that may be inside the cavity before putting in the oil. I have smoked at low temp for 3 hours not caring what the internal temp is because I drop it in the fryer...

    It seems to Al people that eat it talk about getting the best of both ways. Before we moved I was doing 8-10 turkeys that way for the hospital staff if she was working and it's the was they always wanted them

    As far as the turkey unless it has changed recently the USDA doesn't recommend smoking a turkey over 12 lbs. That being said you can spatchcock it and be ok or you can smoke it at high temp like 325-350 at which point the smoker becomes like an oven with smoke added.

    At our house way back when it was we needed oven baked and fried but since it was a family and extended family thing it required multiple turkeys so no big deal. When I got into smoking it became smoked and fried. I was in chat one night with some others and we got to talking about doing turkeys...
