Smoking Meat Several Days Before Serving

I’m doing the same thing. I just vac’d up shredded pork and shredded beef for use next weekend. I agree with @Dive Bar Casanova, it tastes better the next day. I always make up sauces, chilI, and baked beans at least a day ahead to give the flavors time to meld. Even jerky tastes much better...

    Pork and then more pork!

Impressive, I like the fire door. The entire rig looks like it could move under its own steam! When you recover from this weekend, we might need a more detailed tour.

    Pork and then more pork!

Beautiful hard days work. I’d like to get a tour of that smoker. And, be invited to dinner. I would think your uncle would be pleased.

    Busy day

Getting ready for tomorrow’s picnic with the family. Today I smoked a 4lb butt for pulled pork, CSR burnt ends, and smoked bourbon baked beans with bacon and ham. Everything was done over apple and will be served with an apple jalapeño BBQ sauce. The smoker was stuffed all day and it came out great!

Anyone have a standby generator at the house?

I have found StarTron products to be very good, both gas and diesel. On our sailboat with a Diesel engine, after one tank, we no longer get soot all over the transom. The engine runs smoother as well.

I just did a chuck roast in a red sauce in our Lodge. It cooks with a nice even heat and is pretty easy to clean. I know that from cleaning it, it gets used a lot in our kitchen.

@SmokinEdge and @jcam222 - thanks, I’m smoking a small butt today and will use your suggestion.

    Pulled Beef Tacos

The reduced red sauce is amazing. It will taste really good drizzled over the meat. I let it sit over night in the refrigerator, then skimmed the fat off the top this morning. I could just sit there with a spoon and eat it like soup. It picked up the meat juice and the spices from the rub. I...

Thanks! Thanks! Now I need to write everything down! Yes, it tastes great. I’ve learned that you need to make twice as much just to account for the sampling.

    Pulled Beef Tacos

I pulled the roast from the smoker at four hours at 225, put it into a Dutch oven with a red sauce I made. Then it took four hours in the oven at 275. Judging the doneness by temp or time was not valuable. They got me in the ballpark. As has been said here so many times, the real test is...

    Pulled Beef Tacos

My home-brew smoke generator works great. I have two smoking tubes so I can easily reload as one peeters out. I am using a mix of pellets and chips. I get very consistent and with the air eductor, controllable smoke. It works great for cheese, putting zero heat into the cabinet. It is one...

It is sweet when the smoker is just cruising along, you have a nice cup of coffee, the paper to read, and the chores just have to wait. Thanks for the likes!

Thanks, I will give that a try!
