Just inherited a Traeger & have questions

Your smoker has an old style temp control system. I believe you can upgrade that to one that has more settings. My Texas model is about 8 to 10 years old, and is analog with a dial. It has 10 temp settings. It looks like yours has: Smoke= 150 to 180 F. Medium=225 to 275F. High = 350 to 400F. On...

    No Wrap baby Backs

Thanks for the compliments and my wife is smiling too. The part I like about no wrap is I have better control of the product. When I wrapped, I would open the wrap to probe the meat, but it maybe too late by then. I'm a convert of no wrap.

    Zesty Rubbed Butt

Looks good and tasty. BTW. For those that like to grill fresh Tuna Steaks. I use Zesty Italian on the fish, but only for 30 minutes.

    No Wrap baby Backs

I was researching a Gravity Q, the Masterbuilt 800 for my Sister and I came across a video on no wrap ribs. I thought I would give it a try and boy was it good. No more wrapping for me. The cook temp was 250 degrees for 4.5 hours or 203 to 205 degrees. I used a Traeger Texas and cherry pellets...

    Brisket Flat- On Traeger

I agree with thermometer inaccuracies. I keep the probe clean, but I need to do a test and calibration. BTW. The 250 to 260 degrees I was quoting was from a Thermo Works probe at grill level. I will do the boiling water test on it to see if it is off.

    Brisket Flat- On Traeger

I have seen video on Youtube about paper wrap and Yes, paper absorbs moisture. It did for my cook too. Back to pan wrap.

    Brisket Flat- On Traeger

Thanks for the comments. I pan wrapped, on a small rack on the first two I cooked. I will go back to that method. Nice to have validation.

    Brisket Flat- On Traeger

I have only smoked 2 Brisket flats and decided to try another with a different method. 1- 7.5 lb flat already butcher trimmed. 2- Seasoned with Traeger Coffee rub, 1st layer and Meat Church Gospel as top layer. Seasoned as I started the grill, about 45 minutes of rest time. 3- Set Point at 225...

    Economical Smoker or Grill

To the Weber fans, I cut my teeth on a 26" kettle, getting over 20 years on the same model. All I replaced was the grill grate. My only beef was, the old models were difficult to add coals. I had to remove the food and grate. I see the new models have grates that hinge to add coals. I don't...

    Economical Smoker or Grill

The grill prices are from a high end patio store in California. Trying to recover high cost of doing business, I guess.

Thanks for the comment. I agree that the gravity system has convenience that is important too.
