    New to meat smoking, but not fire-based hobbies

    I just received two smokers from a friend who was moving to Texas and couldn't take them on the trailer.     Where do you take the temp in a fatty? Do you put it halfway in the sausage or do you put it in the center? I'm new to smoking (I will also go into roll call soon with some pics of my equipment), and fatties look like a way to get my family to get into it as well.
