    Rust in UDS?

I think mine has come from ashes that may have slipped in the bottom, and because I used to use a water pan. Hopefully with a few more cooks it will go away.

    Rust in UDS?

How do you guys keep rust out of your UDS? I used to put foil in to bottom of mine to collect ash. I then saw that people were using pizza pans, but I couldn't find one large enough, so I used a water heater pan and cut to size. It was sprayed with high heat paint. After about a year now...

    UDS lids

Thanks guys. I'm going to have some guys at my company take some scrap and weld it to the inside of my drum to make a lip for the new lid to "catch" on to. I then want to add a second rack a few inches below the lip. That should give me about 6 inches between racks, and >2 inches between the...

    Chicken legs on a UDS

    Did you rotate the grates?

    UDS lids

looks like my two options are to cut the rim off of the drum or to weld something to the inside of the drum that extends above the lip.

    UDS lids

Just wondering what others have done in regards to a lid for the UDS. I built mine over a year ago and have been wanting to change the drum lid to a dome style lid instead. I bought a grill today that had a 22.5" diameter, but the lid is a little too small for the UDS. Thoughts or...

Need recommendations for thawing ribeyes quickly!

I saw a friend do this and it worked well. He had one of those baskets to out dishes in after hand washing them (you coul find something to substitute) an turned it upside down in the kitchen sink. Boil water and pour into the sink (with stopper in, of course). While your water is boiling...

    Does injecting reduce cook time?

Well thanks again for everyone's input. It turned out great, finished after about 12-13 hours. Super tender, like warm butter. The butt looks a little jacked, I've got the fat cap up (I left it On during smoke and removed before pulling) and the bark "slid".

    How clean out a UDS

I didn't think about it when I built mine. I ended up with a huge basket and couldn't find an off-the-shelf pizza pan to fit. Ended up cutting a water heater pan to size an bolting to the basket. I still have foil below that though, to catch everything that slips through. But it's bc I don't...

    Does injecting reduce cook time?

As it has been smoking since 1 am, I've done a variation of the two! It was rocking at about 230 and dwindled to about 200 at 5 am (alert went off). Made some adjustments and woke up to the next alert (265*). Another adjustment, back to sleep. IT is currently 170 and it's been there awhile.

    Does injecting reduce cook time?

Thanks! Yeah, I'm not sure what I was thinking when I bought it, but we've fired up the UDS and are getting ready to throw it on. In going to have some temp alerts set up, as well as an alarm here or there to double check. I think I'll have it ready by the 1st game instead, but that's...

    Does injecting reduce cook time?

I have an 8.5 lb butt that I want to smoke for the second playoff game tomorrow (starts at 5:30, my time). I realize my options are to wake up early and get to cooking or start it now and let it go overnight. However, this is the first time I've ever injected anything. Does it reduce or alter...

First tri tip and a couple racks of ribs

I like my rub with the exception of the amount of cumin. That stuff is potent. I actually added more of everything but cumin when I made the rub. Next time I may add a little less and add a little more chili powder or other spice. I think most others liked bad Byron's rub better.
