    Everything came out amazing, I made the classic Cole slaw from Jeff's first book and the finishing sauce recommended by yankee2bbq and I didn't spray or mop at all. However it did take 12&1/2 hours for some reason lol.Thanks for all the tips guys.

For me 1 chimney of lump will get me in between 225°&250° where all the magic happens. I don't worry about keeping the exact temp the whole time as long as I stay between those temps...

    Forgot to post this picture. I used a deli slicer and turned the leftovers into roast beef. The sandwiches were amazing...and I was full after slicing everything lol.
