Newbie Smoked First Pork Shoulders Disappointed!!

Yes you can inject if you don't like the flavor you are getting without doing so. I would also suggest using a finishing sauce when you shred. Just do a search and you will find plenty of good and easy recipes here.

    Looking for a new smoker

Have you had food off a pellet smoker? I've seen some people disappointed with the smoke profile in comparison to a charcoal/wood cooker. I have a Pit Boss Copperhead and it is mostly used for smoking jerky and other snacks. I recently was gifted a Thermoworks Signals with Billows. Using that...

    Second smoker decision

I went with a Hunsaker drum and I couldn't be happier. No need for a temp controller as it holds very steady temps. With your budget you could upgrade to their stainless steel drum. I store mine in the garage and I expect it to last a very long time. Best drum on the market imo

keeping your pit/smoker clean and sanitary

Here is a recent article from Texas Monthly on the subject. Seems like "seasoning" might be something that has grown a bit out of control. https://www.texasmonthly.com/bbq/barbecue-myth-seasoned-smokers/

    Vortex with Kamado Joe

I have a Vision Classic and a medium Vortex. I don't have a basket so my vortex sits directly on the floor of the cooker. I really like using the vortex in the kamado even though I can get more capacity using it in my Weber Kettle. Seems like the wings come out more crispy on the kamado.

    Thermo-Works "Smoke" Thermometer

My Smoke fell from about 6ft onto concrete. Didn't hurt that joker at all.

    Ribs - Aaron Franklin Method

I think I remember reading that the 321 method was for full spares at a temp of 225. I usually cook at 275 and I wrap after about two hours. I have found that having them wrapped for more than 45 minutes gives them a fall off the bone texture that I don't personally care for. After I unwrap I...

    Blackened seasoning?

I like Paul Prudhomme's Blackened Redfish Magic. I flip over my GrillGrates and get them screaming hot and do blackened catfish on the grill. Good stuff.

    Yoder Wichita vs Lang

Guy that had it bought a pellet smoker and wanted it gone. Just a little bit of surface rust on top of the firebox and a flat tire. He asked for $500, but I offered $400 and he agreed. I jumped on it. It seemed like he thought that surface rust was a major problem, but I hit it with a wire...

    Fan add on for WSM

I have a PartyQ and it works as advertised, but it runs off batteries and does a good job of draining them. Had to make sure to have fresh batteries anytime I wanted to do an overnight cook. I now have Thermoworks Signals with Billows and that set up has worked great. There are other brands...

    Costco or Sam's

I got a Sam's membership a couple of years ago so I could buy a kamado grill they had on clearance. I recently let it lapse because I didn't use it enough. Only really bought the 400 pack of nitrile gloves and the 500ft roll of heavy duty foil. They do have pork butt for $1.30/lb here though...

    Lang Clone

How big is that joker going to be? I have the 36 and it is a booger to drag around the yard.

    Yoder Wichita vs Lang

I am able to empty the smaller Weber chimney inside the firebox of my Lang 36

    Yoder Wichita vs Lang

I don't recall reading many flattering things about the Yoder, but I don't have any first hand experience with that brand. I own a Lang 36 that I picked up on Craigslist for $400. I have only cooked on it a handful of times, but it seems to work as advertised. I mostly cook on drums and a...

    Spam in my Conversation Box!!!!!

I thought this thread was going to be about actual spam and that you named your smoker the conversation box.

First rig to take the plunge in...

My first "major" grill/smoker purchase was a Vision kamado from Sam's on clearance for around $300 a couple of years ago. I had a blast cooking on that thing and I still use it to cook wings and a few other things. There are people that will say that a kamado style grill produces a stagnant...

    Ribeye over hickory

So do you just throw a few chunks of wood in the chimney and use a starter under it to light them? Can you elaborate on the fire building?

Best time of year to buy one-black Friday?

I would suggest checking Brickseek. it isn't 100% reliable, but I was able to pick up a Pit Boss pellet cabinet for $109, Weber Premium Kettle for $40, and a bunch of other good deals. I found most in January of this year. I wasn't looking for electrics though.

October Weather In Central Texas (Couple Pics)

It is the opposite for me. I smoke year round, but once the temp drops and its not 100 degrees outside I start smoking more.

Brine or not to brine whole chickens

I'm usually in a hurry so I don't brine. Just cut them in half and start cookin.
