    Beef ribs (chuck)

    Picked up some chuck ribs the other day and decided to throw them on today..They had a lot of fat to trim, but they turned out fine..Cooked at 240° for about 7 1/2 hours.. No foil, no spritz. Just seasoned with SPOG and smoke..These were probe tender at around 199°. About 3 hours in...

    So i started a 13lb Prime whole brisket last night at 11 ish... Rubbed up with salt, pepper. montreal, onion and paprika.. Brisket at 10am 155 IT..This Flame Boss 300temp controller makes the over night cook on a WSM , painless... Held steady all night.. Threw some st louis ribs...

    Costco Prime Packer

    A couple of weeks ago I bought a new thermometer for my smoker..If any1 is in the market, it's a good 1...! of the 6 probes was 1 degree off at boiling and 1 degree off at ice bath test..Also love the bluetooth hookup to my phone where I name each item and use custom temps or time . And set lows...
