Alright, I am tired of wearing out cheap poultry shears. I spatchcock and/or halve almost all the chickens I smoke and would like to invest in a good set of shears that will last a while. I would also like something that would hold up to doing turkeys if such a product is truly out there...
I was curious if anyone else had tried this new product from the folks at Wicked Good Charcoal yet. I recently found a distributor in the Kansas City area and was actually after the Weekend Warrior lump to try in the BDS. While I was there he showed me the briquettes that he also carried and I...

They're the truth.

A photographer for CNN was assigned to cover southern California 's
Wildfires last year. He wanted pictures of the heroic work the
Firefighters
were doing as they battled the blazes.
When the photographer arrived on the scene, he realized that the smoke
was
so thick it would seriously impede...

Anyone have a good recipe for a Mexican type marinade? I'm looking mainly for beef for something along the line of fajitas and thin flank type steaks. There are a couple in the archives, but not exactly what I'm looking for I don't think, so I thought I would see if someone had a tried and true...
This for leorousseau. Sounds like a neat idea for a poll to me. Be interesting to see what our members prefer. Maybe one of the mods will merge the threads from the original post in General Discussion so it can be a reference in one tidy spot.
I have been saving brisket points again for a while to have a burnt end feed. We really enjoy doing this and I thought I'd share some pics of it this time.
I always re-rub the area were the point was connected to the flat to make some good bark there while re-smoking the points.
Here are the...
Here is a pic of dinner that just came off the new Performer I got for Father's Day. I grilled a pair of 1 lb. ribeyes and cooked baked taters right down in the fire. Pretty good eats. I used RO lump and hickory chunks for fuel. Grilling is a little fast paced for during shots, so I just took a...
I just got done rubbing tomorrows big project down so it can bask in the rub goodness over night in the fridge. This is a monster 24 lb. chuck roll I've been waiting to do for a while. I caught it on sale a while back and have been wrestling it in the freezer ever since. Gonna use the the ends...
I won some High Mountain Jerky Cure & Seasoning at the gathering last weekend so I figured I better post some pics of the first batch. I thawed out a couple small deer roasts to cut up and ended up with a little over 3 ½ lbs. of meat trimmed and sliced. Seasoned it up and put in a Pyrex baking...
I just wanted to make a quick note and thank everyone for all their help keeping the campsite and kitchen area clean at the round-up. At the top of that list are Mrs. PeculiarMike, Mrs. Shortone, and Mrs. SmokyOky. One or all of these fine ladies were seemingly constantly cleaning up behind us...
The distinct honor of first guest to arrive goes to Shortone. He arrived @ about 8:45 this evening. We will be holding down the fort and waiting for the rest of ya'll to catch up.
Be safe getting here and Shortone and I will be looking forward to your arrival.

I just came from the site and the folks have done a really nice job getting everything ready for us. Everything that was promised was delivered upon at first look. We have a fridge, a freezer to hold excess ice, a stove, and the rest of what you would expect in a kitchen. I myself am pleased...
All the women decided it would be pulled pork for Mom's day. Since we know better than to not at least try and please the women around here that's what we had. I picked up two fresh whole shoulders (skin on) Fri. afternoon. I got them from a butcher I hadn't used before and was very pleased...
Smoked a couple 10 ½ lb. turkeys today. Used peach wood for flavor and RO lump.
Before, rubbed w/ olive oil, a little Sea salt, Tony C's, and fresh cracked pepper:
Done, skin was nice and crisp on these guys, very moist and juicy:
I made an awesome platter w/ wings, thighs, drumsticks...
The market had Prime Rib on sale this weekend and I just had to get one to test out in the BDS. Simply awesome is what it was. Great flavor and no need to sear before or after to get a good crust like I like. It was a little 4 ½ lb'er.
Pulled and ready to tent w/ foil at 130°:
And a couple...
I took delivery of my BDS last week and finally got to fire it up today. I was impressed for my first time out. The smoker performs as represented and am very happy with the purchase. Finally got enough room for the big smokes.
I smoked a brisket, two fatties, a chub of bologna, and 8 andouille...
