Well, Huh..... Slight color on pork belly: Bacon Done!

Not that I have done a whole lot of bacon, but this is a first for me. Got two pork bellies from Costco. Did my normal dry cure using Cure#1, salt and maple sugar. Also added a couple tablespoons of maple syrup. Put in Food saver bag and closed, but did NOT vacuum seal. I got most of the...

Question on Not Freezing Raw Sausage for Cooking Later....

Rather than derail the thread by kawakx125, I thought I would start a new one. One of the comments I saw, by chef jimmy j, stated "we do not recommend freezing raw to be cooked later", and I would like to ask for additional information on Why? I did a quick search and it appears that it is...

    Time for more bacon

Went to Costco and picked up two pork bellies for a new batch of bacon: 15 total pounds of bacon. I poured in a little bourbon barrel aged maple syrup for some added flavor. Today is Day 1 of 18 for curing/aging. Gonna be a long month.

Beef, Other than Chuck, for shredded beef??

Happy New Year All!! I am not a big fan of chuck roasts and I am wanting to try shredded beef again. The chucks I have tried tend to have a fair amount of gristle and stringy stuff through out, and I have not been pleased with the shred. If you had to pick one or two other meats to try for...

Getting Ready to Smoke Some Bacon: Bacon Done!!

18 days ago, went to Costco and got a nice 10 pound pork belly. Cut off 7 pounds, measured out the salt, maple sugar and cure and put it in a big baggie. Turned each day and decided time was up! Pulled it out, rinsed and now in the fridge for a day or two to rest. Then I fire up the smoker...

    Made me real charcoal baskets

So I had a charcoal holder that looked like I made it with a rock! No, no pictures will be posted. I looked around the garage and found some leftover metal, bolts, etc and over the course of a couple of days, cut, drilled and bolted these together. The smaller one is for sticks/chunks/charcoal...

1st Time Sausage: Polish, Italian and BBQ (WUT??)

After all the reading and help from everyone with my bacon and brisket, I thought I would give sausage a try. Being 1/2 Polish, I did grow helping Mom/Dad make sausage but I only "helped" by turning the crank on their grinder..... I never did the hard part.... So, I thought and my age (no, I'm...

Who uses beer IN the sausage instead of water??

My Mom always made her Polish sausage with beer, not water. Granted, this was many years before all the craft beers available today. I tried to do a search about using beer vs water, but didn't find much. Most comments had to do with boiling brats in beer. How many use beer instead of water...

Time and Cure #1: How Long can it go?

Good Evening, I hope I can phrase my question for the answer I am looking for. First, a little background. I feel confident on hot smoking things like ribs, tri tip, pork, brisket etc.... Running the smoker at 225 or above, even for 11 hours or more for brisket and pulled pork are fine...

So, The Brisket turned out Pretty Good!

Howdy!!! Just wanted to say THANKS to everyone who commented on my post a couple days ago when I needed a plan to rescue what I thought was a brisket cook going really really slow. Turns out the thermometer or probe or both were malfunctioning and throwing off wrong temps. Anyway, I was able...
