How hot do i need to have the cooking chamber and how long should I smoke it. Also I have an offset horizontal smoker should i keep the fire in the firebox or use indirect heat in the larger chamber? I used a brine and am looking forward to the process today.
Hey thanks for the info seem to be working fine but my outside gauge is reading lower about 20 degrees lower, agian I just bought the Horizon 16" smoker the temp gauge looks to be pretty steady. I guess what do i belive

My first butt on a 16" horizon smoker. 6lb boneless shoulder smoked for 4 hours @ 250 and finished in the oven, don't hate me i was kinda in a hurry. I would like to try it again without the oven, but a little scared on how long it takes.
