    Kreuz Brisket and Clod

OK. I am fairly sure I hit the outer limits of Heaven today, or the Center of the Universe however you may believe. I think I put out a pretty fair brisket and butt. BUT... I went to Kreuz today, and I will be hitting this place pretty regular now, when I get that way. I, like the majority...

Instead of digging a firehole in my yard, could one use....

We cut some 55 gallon drums in half, with a fist size hole on the bottom of one side for air. Really helps with heat retension, especially in cooler weather.

    Leaving Rind On

I have always loved rind. Was kind of a treat when I was a kid. I tried to figure out how to make that sound less redneck. Oh well...

    White Oak for mesquite

Rabbithutch is correct. Plenty of oak, hickory and pecan. Gonna have to go a few hours south or west to get to the mesquite. Stormy springs make for an availability of wood. I travel Houston, Odessa, back to Tulsa a few times a week...

    Old Timey Curing

As I have been sitting here reading, I get the feeling what my PaPa may have been doing it really close to what Cycletrash and Dave54 were doing with their prosciutto minus the wine rinse. The hams hung all winter and through the summer in the store wrapped in cotton cloth.

    Old Timey Curing

Hello all, Like a lot of us, I remember my PaPa curing meat and then smoking it. I remember him rubbing Morton's dry cure on it; and my mother told me this, since I don't remember this part, he would place the pork in a wood tub packing salt around it all heavily, maybe 2-3 inches. In would go...

    New Smoke Hollow 44241G2

Jeff, would you mind posting a pick of the inside? I have this available at a local farm supply , but I have not seen it open in the pic on the box and they do not have it assembled in the store. Thanks

Master Forge Smoker temp not high enough

I was having the same problem.  I could get the temp to about 240 in the summer, but come winter, I couldn't get over 180 on a 40deg day.  So, to the propane supply I went, bought a high pressure regulator that had an adjustment, getting rid of the regulator that came with it (no adjustment).  I...
