Well it was bound to happen. I have a Southern Pride SC200 as part of my arsenal and today, as I type this, I have an electric heater inside the smoke box just to get it warm enough to start.
It has a temp probe inside that won't let it start unless is a certain temp and I guess -25C is not...
I haven't posted in a long time but, I have been watching and learning and putting all the good info to use.
I was fortunate enough to get my hands on a Southern Pride SC-200 commercial rig.
These things are quite expensive here in Canada and I got one at a farm auction for $500.
That's the same one I have and it was the largest at the time. It works pretty good, but has it's draw backs. Such as...legs are flimsy, be careful when moving it. I added braces to mine.
Door leaks badly, I added stove door seal to close it up.

Thanks for the info. They came out very good. I think more spice is needed for me. I have a smoke generater, and that was my next thought. Smoke for a while before heat.I just came back from the farm where I cut a winters supply of hickory and apple
I had a hell of a time getting started. It's snowing here and the wind is 45 kph and I could not get the smoker below 160* with the door closed and the lowest setting. I had to turn the gas up and open the door to compensate for the wind and heat. It seems to be working ok now. Two more hours or so.

Thanks for the info. I just got a care package shipped from FLA. I spoke to Windsor again and I was mistaken, (first time...ever). They told me the first time that it was not sold in Ontario and my brain just took it from there. Oh well, thanks again, I've got enough to do plenty of pepperoni now.
Actually, I spoke with Morton and Windsor Customer Service and they checked for Canadian outlets. They say no dice.
No big deal. I live on both sides of the border and can pick more up the next time I get down there.

Online store only. About $26 for a package before the Canadian government tacks on it's share.

On a related topic.....can anyone tell me, with first hand knowledge, if using pecan wood for smoking would effect a nut allergy?
I would love to use some pecan for smoking, but, also would hate to croak the neighbors. (Well, most of them).
Update.........Everything worked out great.Butt was more than fine and Dutch's beans were a big hit.

Question...Can I expect longer cook times if the smoker is full? My thoughts are that each piece of meat is an individual...
