    I've found that beef from Mexico tends to be lean. We had some Rib eyes last night from Mexican beef. They were pretty lean as well. But came out very good. I'm also curious about this injection marinade as I've only used Tony's Cajun before.

    I have 4 of those in the freezer. And had a couple already. Up here they are not tagged "Mexican" But it is labeled born, raised and harvested in Mexico. The quality is fine. The boneless rib roast I'm doing today is from Mexico. They are FDA approved beef. And the sell or freeze date is 12/19...

    Yesterday I bought 3.5 pound boneless rib roast. Slightly trimmed. Saved the large part of fat for future use. Inject with Tony's roasted garlic and herb. And rubbed with pepper and smoked kosher salt. Cooking method unknown yet. Waiting on weather outlook.

    Infused olive oils can go rancid quicker then other oils. Sunflower oil also works well for this. And it has a longer shelf life.

    Now that is a perfect use for that bottle. Perhaps that bottle of Redemption rye will have a new life soon! I've used the vinegar on veggies. Last night it was steamed Broccoli. I've always put vinegar on some veggies. But this really does kick things up.

    Robert @tx smoker was talking to me about spicy vinegar. I have a touch over 3 quarts of his recipe. And was thinking about using other peppers as well. So, I found some Long hot peppers. And while their heat level can vary like crazy. I figured it would turn out interesting either way...
