    cured venison blackstrap

Yeah. I know . I have never cured backstrap in any manner before, but I am looking for some variety. My sons do some guide work on a couple of large ranches and pulled me in for management hunts. To make a long story short, I am blessed with a lot of venison in my freezer plus I just butchered...

It doesn't have to be loin. I have seen similar pieces of meat made with pork loin and beef loin. I have been doing some research and think this recipe is a variation on A pepper cured Lonza. Just smoked.

    cured venison blackstrap

Hello everyone. I was wondering if anyone could help me out on with a recipe. When I was a kid (a long time ago) a buddy of mine would bring venison "jerky" to school. This was apparently an old family recipe, which to my knowledge his family has never shared. This "jerky" was cut in long 1...

Thanks guys. Sounds like it is time to cash in my Cabelas' "points" and pick up a stuffer. I butchered a pig this weekend (that was some serious work). Ended up with some excellent meat. Looking forward to making a variety of sausages. Thanks for the input.

    safety concern

Yes. The more that I do this, I realize a really good scale and an accurate thermometer are essential to produce a high quality product that is safe. That being said, there are probably liots of guys on this forum that can give you an accurate meat temp by feeling the density of the meat. I am...

Hello Boykjo, Thanks for the video on the sausage stuffer. Did you reverse the stuffer right before you tied off the link? Do you Aways make your links one at a time ? I have been alternating the direction of my twist with varying degrees of success. But this really creates a problem if my...

Thanks Dave. I am running and re-running everything through Martins calculator to make sure that I am being safe. I did want to ask about other sources of salt. In this recipe the, worcestershire adds about 64mg of sodium per teaspoon. That is easily converted to grams once you determine the...

Thanks Mike, that is a nice and easy ratio. I can use that. I have the jerky in the dehydrator now. I saved about two pounds so I can put a little smoke on it before it goes in the dehydrator. Thanks to everyone. This forum is great.

Thanks. I have been saving my points for the past year and may burn them on this purchase. bkleinsamid is very satisfied with the LEM. I am going to do some research. The electric motor sounds like a great bonus. Because of my schedule I am frequently making sausage by myself . A foot...
