    Did you use the water pan? When I seasoned my big block I did not use the water pan. On the lowest setting the temp would creep up to 240. When I did my first smoke, I added the water pan and was able to get the temp down to 170 on low. Over the weekend I did a all nite smoke on a brisket. I...

    Hi ropdyke I just fish the wire down thru the top vent and set the probe on the rack next to the meat. Make shure it does not touch the meat. Then I place a pot holder on top of the smoker to set the unit on.

    Hi Tundra This afternoon I recived a new big block from epod. Put it together and put the Lp and wood in it and started to season. I have let it run for about 3 hours on low. The paint smell is gone now. Think it is ready for the real thing!
