First smoke on the sams member mark 28" pellet smoker

I recently found this at my local Sam's Club for $199.91 (plus tax). It was too good a deal to pass up. My first cooking on it was a steak with the control set to "high" after the first seasoning run. It turned out pretty good, but for steak, my Vision ceramic kamado grill does much better. My...

    MES trouble code help

Mine has been giving me trouble for some time. I decided to try removing the screws for the controller, unplugging and replugging it and then put the screws back in. It must have been a bit of corrosion in the connector, because after I did this, the MES has been working fine. How long that will...

Pastrami From Corned Beef on the Smokin-It # 3

I concur with the soaking. It really does make a difference. I have made pastrami a few times now. I always soak it in changes of water first. I have also tried steaming the finished Pastrami a couple of times. It warms it up nicely for a great sandwich without drying it out.

    Thanksgiving Turkey 2011

Thanks everyone. It was really good, one of the better ones I have done. I took part to a group thanksgiving dinner with several families from the church at which we are members. It received great reviews. For the brine, I used the recipe from Alton Brown's Good Eats Roast Turkey...

    Thanksgiving Turkey 2011

This year, I did not go with a heritage bird, but a standard one. However, I at least found one that was not injected with somebody else's idea of what should go in there. Instead I brined it using a recipe from Alton Brown's Good Eats show. This bird started out at just under 19 pounds. I left...

Anyone use wood pellets in their MES?

I have used them, but neither in the chip tray nor in an AMNPS, but in a Smoke Daddy. However, I did not use them straight. I used the information on Smoke Daddy's site and used a mix of lump charcoal, pellets, chips, and small chunks of wood. This combination worked well to keep the smoke...

Using Evernote to save & organize recipes

Here's another alternative: http://sourceforge.net/projects/grecipe-manager/ It is available for (in alphabetical order) BSD, Linux, Mac, and Windows. The good thing about that is the ability to share recipes easier because the format of them will be common. I use it and it does allow having a...

    cleaning your mes 30?

Doesn't seem to have affected it since I did a thorough job of wiping the softened crud out with a microfiber cloth and plain water. Anyway, if it left a residue, it would not be something that could be used for regular ovens either. An alternative method is to have the oven/smoker hot and also...

    cleaning your mes 30?

Last time I used my MES, I set a dish of ammonia inside after it had cooled a bit and left it to sit overnight (vents shut). The ammonia fumes softened up the crud. The next day, I took a microfiber cloth and hot water. After wringing out the cloth well, I used it to wipe out the accumulated...

    Free-range Turkey with Q-view

Thanks everyone for the nice comments.  I haven't had much time to read this week. I'm taking a short break from studying to try to catch up a bit. It is interesting about the free range. I am not surprised that some "free range" birds would have higher contamination levels. The man from whom...

    Free-range Turkey with Q-view

I finally got around to smoking the free-range heritage breed turkey we purchased before Thanksgiving (family situations meant we were away for both Thanksgiving and Christmas). We had purchased it at the local farmer's market. This bird first went into brine for about six hours. For the brine...
