    I smoke ribs using 3,2,1. 3 hours on smoker, wrap and go another 2 hours, then unwrap and go another hour or until 205 if you like fall off the bone. I put on a coat of mustard and the rub for a few hours before hitting the smoker. Some of the guys put apple juice or other things in the foil...

    Thanks anyway, gonna smoke a couple of chucks Saturday. I'll just do a basic rub on them. Good luck with the ribs, did some last weekend, just finished the leftovers tonight.

    Ribs were falling off the bone and very tender. Didn't get a pic of the baby backs but here are the beef ribs Beef and pork ribs were both done right at 5-1/2 hours. Real good smoke ring on the beef ribs.

    I'm impressed with the build quality of this smoker. Held heat well, I was able to run consistent temps around 240. Loaded up the charcoal basket with 15 lbs of Royal Oak with a divider in the middle, forming a U shape of charcoal, lit one end with about 20 briquettes from a starter chimney...
