    I agree. I like to use chuncks myself. Oh well, since the only chunk that I have is hickory and I don't feel like using it on the bird and I haven't seen the UPS guy yet, it's starting to look alot like I'm going with the foil wrapped apple chips.

    I haven't soaked the chips. I have seen wet wood soot on the food before. I heard that the chips will last longer if they are wrapped in foil with holes in it. Has anyone around here ever tried this before?

    The whole reason that I moved here is because I can't stand cold weather. Mother Nature is just being flat out rude. I'm supposed to be calling my family back in Ohio and driving them crazy with weather reports from Phoenix this time of year. I hope she'll get with the program soon.

    I have been using a lot of pecan and a bit of hickory. You could smell the wood burning, but I thouhgt the meat itself would smell great while it smoked. The wood did smell nice.

    I have now used the smoker twice. I have really enjoyed doing it and the food has been fantastic. I have, however, been disappointed. I expected the meat to carry a heavenly scent into the wind and make my neighbors drool. What is there that smells the best? I have heard brisket smells great.
