stayhot ..white cloud's recipe calls for 1 tablespoon of tender quick per pound and we found this to be to salty...so we reduced it to 2 teaspoons per pound.. we have never cared for the liquid brine recipes ....

Well this is how I do it anyway...
We have been using White Cloud's recipe for 2.5 years all we changed was went to 2 tsp. of tender quick and 1/8 tsp of red pepper per pound and ever one loves it..Also we smoke for two hours at 150^ ...Has anyone tried white cloud's recipe with less sugar or no sugar ???
Hey Bear...I used your unstuffed beef stick recipe again using pork ...turned out perfect 25#...for each 5# we used.
2 1/2 TBS TQ
2 tsp Italian seasoning
1 TBS crush red pepper
1 tsp black pepper
1 1/2 tsp sage
1 tsp cayenne
1 1/2 tsp coriander
1 tsp garlic...
Well Gary ..lol yes headed that away..still have work to do..we have the kitchen finished and most of inside walls back up..we did make some skinless pork sausage using one of Bear's recipe last weekend ..turned out great..lol so much yet to do but will get there...
Hey Bear...so far so good got my diesel tractor and generator running again...my structure is sound.. we removed inside walls and insulation just drying out now.lol my wife taking this opportunity to remodel kitchen..we are doing fine...
Yes Gary that is my house and barn...the smoke house came through the flood in good shape..we had 6 feet of water in house and water was over smoke house..still drying out....

Well folks..we had quite a bit of water...lol ..have not smoked any meat lately..we lost 25 laying hens and three sheep..but now things are looking up....
