    Kamado style grill preferences?

Well, I(she) ended up getting the pit boss. It was $100 cheaper than the KJ Classic and we also got the diffuser/stone thing. It arrived this morning which was about 7-10 days faster than we thought it would be here. I'll post some pics later after I get home and get it set up.

    Kamado style grill preferences?

Thanks for the advice guys, I appreciate it. I really want to keep it around $700 or so, which means the nicer, more expensive brands are out of it for me. The ceramic plate is another $50 on top of the grill. I don't need a cover as this is going under my covered patio. Both of the ones I...

    Kamado style grill preferences?

Looking to move away from my cheap charcoal grill, weber gas grill, and electric smoky mountain smoker to a single kamado style cooker. Wife wants the back porch tidied up and this will do well to speed that along. I had entertained the idea of a traeger style grill, but think the kamado style...

    Good injection recipe for turkey?

Yes, I liquid brined.  Dry brine is just another word for putting a rub on it with copious amounts of salt.  http://www.seriouseats.com/2012/11/the-food-lab-the-truth-about-brining-turkey-thanksgiving.html is the link I was referring to but I was incorrect about their result.  They say that...

    Good injection recipe for turkey?

I brined once and never again. Just not worth the hassle to combine those ingredients, have a cold place to put a large bird in a clean large container, and deal with the hassle.  You can get better results by injecting the night before you smoke (8-12 hours before), and letting the injection...

    Trying something new for Thanksgiving

I used to fry birds exclusively and switched to smoking them and everyone agreed smoked was better.  Plus, its cheaper after the initial smoker investment as wood is cheap compared to gallons and gallons of oil.  Alder wood and some hickory or just plain hickory and your guests will be...

I need some marinade injection lessons please...

I find the creole butter to be spicy so to say its not hot may not be true for everyone.  I smoked a turkey that was injected with creole butter on Saturday 11/22/15 and the entire family thought the meat where it was injected was spicy.   I have tried the Jalapeno butter in years past and it...

    A-MAZE-N Products Thanksgiving Giveaway

What am I most thankful for??? Earlier this year I was diagnosed with tongue cancer.  It was squamous cell carcinoma and was the size of a golf ball.  Chemo and radiation took care of the cancer, and my last treatment was early July, but it knocked me out and I was basically bedridden for most...

To brine or not to brine?

I've done it both ways.  Honestly, brine is a pita.  Just inject with cajun butter or your favorite homemade garlic butter or whatever, let it rest for a few hours so the mixture soaks into the meat, rub with olive oil, and smoke it. I don't think a brine does anything that an injector and some...

    No brine smoke method

I know most everyone says to brine the turkey, but I've done it in the past and felt the bird gained nothing from it.  This is my preferred method of smoking a turkey, just throwing it out there for another recipe/opinion on how to do it. I can never taste the brine and it doesn't add anything...

    Rock Chalk Jayhawk

You're a better man than I am Gunga Din.  The baffle I made really helped disperse the heat and smoke throughout the smoker, but it was a pain to move around, clean out, etc, compared to this electric smoker.  I'm giving it to my dad who will use it and enjoy it while I emply the KISS method...

    Rock Chalk Jayhawk

I've been using a cheap offset charcoal smoker for a few years and have had issues with low temps.  I also had to fashion a metal plate to diffuse the heat coming from the firebox to the smoke section as it was burning any meat that was too close to the fire.  I added a fan near the intake which...
