Auber dual PID Smoking System completed

You may have figured it out already but it is easy to adjust your holes simply by the foil you put on the bottom.  You can punch through as much or as little as you like.  I went ahead and disabled the built in thermostat because with my probe in the middle of the smoker and temp set to 250 the...

Auber dual PID Smoking System completed

I believe the caution not to pre-Heat is because with wood in the firebox when you open the door a gush of air can ignite the gasses from the smoldering wood.  If you pre-Heat without wood in the fire box there should be no problems.  I have a Smokin-It#2 which looks identical to your smoker...

SmokinTex 1400 owners out there?? Help me get TBS.

SmokinTex 1400 owners out there?? Help me get TBS.

Along with PCALLISON and Scarbelly I modified my Smokin-IT #2 and use AMNPS all the way.  I did a 5 hr salmon the other day and TBS the whole time.  No creosote and great flavor.  I wouldn't cut any other additional holes in your smoker.

New smoker outside of DC in Poolesville, MD

Hi Everyone, I grew  up in Georgia with what I call REAL pit barbeque joints.  A plate of pulled pork, brunswick stew, slaw, potato chips and a few pickles and ice tea were typical fare.  I have experience with an offset side firebox barrel type smoker that was fairly cheap.  I couldn't get...

AMNPS Mod for SmokinTex and SMOKIN-IT Smokers

Just got a Smokin-It #2 and did the mod and smoked some salmon at 150F with the AMNPS loaded with Pitmasters Blend.  Ummmm Good. The stainless is tough to drill.  I turned the unit upside down on 2 2x4's to protect the knob and vent and drilled from the bottom.  I finally got a 3/16" Cobalt bit...
