    Chicken Skin Inedible?

    Thanks everyone for your input! I just cooked 2 5 pounders at the fire station for the boys and they came out great. I bumped the temp up for the last hour to 350 and the skin was perfect. Next time I'll set the temps for the entire smoke around 350 and see how that works out. Thanks again!

    I smoked my first chicken the other day... and it turned out awesome...best chicken I've ever had. The only problem is that the skin turned into rubber and we couldn't even chew it. Does anyone have any suggestions for crisping the skin up a little bit so it's edible? I smoked the first...

    Smoking grain

    Anyone here smoke their grain before brewing with it? What kind of wood? One beer I know of that smokes the grain is the Alaskan Smoked Porter...great stuff! I'll try it with my next batch and let you know how it turns out!

    MES temp controller off?

    Thanks for the ideas guys. The Taylor is a digital, and i placed the probe both in the middle of the smoker and thru the top vent, both readings the same. I tried calibrating it in boiling water, which read about 206, so I know it's about 6 degrees off...I'll try it in ice water too. I'll try...
