Brining & Cooking a Bone-in Pork Loin Roast

Hi all,  I just picked up a great 4lb bone-in pork loin roast. I'm trying to decide between smoking in the smoke hollow or grill roasting over indirect heat....but before I do that I'd like to brine it overnight.  Does anyone have advice for a good brine? Just trying to make sure I get the...

suggestions to up my game on a Smoke Hollow ES?

OP here - This is helpful, thanks. I do use the water pan and I've always thought that it keeps things a little too hot (the surface area is huge). Trouble is, my shoulder has spiked its temp to 150 after only 2.5 hours. Trying to decide now whether to keep it going and bring temp of oven down to 200, or...

Final Smoked Salmon with recipe, instructions, and Qview

Thanks for this post, Bearcarver. I had tried smoked salmon several times before and it never came out quite right. I used my own brine, but followed your guidance on the time / temp for smoking. I have an electric Smoke Hollow, so getting the temp down to 100 is pretty difficult, if you want to...
