I thought so, too. That's why I grabbed two of them! I'm seasoning a Hunsaker drum right now, but I can definitely make these 2 work out for a lot cheaper.

Another option... I just picked up a couple of smooth sided, removable lid 55 gallon drums from this guy: https://tucson.craigslist.org/grd/d/tucson-55-gallon-metal-barrels/7074034328.html $30/ea and a great barrel to start your own ugly drum smoker from. The two I got were both unlined...

    Smoking in SE Arizona

The Santa Maria style is just one of the types available from AZ BBQ Outfitters; he also has offsets, cabinet styles, etc. The one in Cambelback actually builds the pits for Little Miss BBQ in Phoenix, which are known far and wide for excellent Q. I'm not an advocate for either, but I'd say...

You can check out azbbqcentral.com; they have a couple of pit builders listed on there. There aren't many that I've been able to find in AZ, though there are plenty outside of the state if you want to pay $400-$500 for shipping.

    Alternative to Assassin 17?

You won’t have any problem maintaining low temps with the fire on bottom. The water pan in these units keep the temps rock steady and right where you want them. I’ve not heard of issues with the BGE or other ceramic cookers and dirty smoke at lower temps. I know a bunch of people doing low/sow...

    sous vide

Hmmm... Interesting. Looks a lot like the Beefer, but with a few more model options and a lower price point. Might have to take a look at that.

You can do pretty much anything in it. My favorite use so far for it, though, is reheating my cooked meat. Ribs, brisket, you name it - best way to reheat it without recooking it. With that said, I listened to a podcast the other day where they mentioned that they cooked a brisket flat on a...

    Smoking in SE Arizona

There is a newish group that has at least a couple of events a year: http://azbarbeque.com/ I'm really just looking for more backyard/informal type stuff that gets folks together and learning from one another. But... either way, I'll keep on grilling down here in SE AZ! Thanks everybody!

    New pellet smoker help

I'd also recommend taking a look at Grilla Grills - their Silverbac and Grilla models are fantastic machines and the customer service is out of this world.

    Alternative to Assassin 17?

Why not a Backwoods Smoker Chubby 3400 if you're looking for something small and not overkill? Reviews on those have been pretty dang good and sounds like it would fit your bill. From what I understand, they hold temp really well. I'd still add an internal probe (FireBoard) to monitor temp, but...

    Smoking in SE Arizona

Hello from way down/over in Benson, AZ! Anyone else feel like BBQ is not represented enough here in the Southwest? Been looking around at the competition stuff in Arizona and it is definitely slim pickins - especially if you're not in the greater Phoenix area.
