    What those guys said already. But to clarify, I think you should cook it fully and pull it. It's such a pain in the butt to thaw large pieces of meat. If you pull it vac pack it or ziplock it and freeze portions like that, then you're only a few minutes in hot water away from dinner.

    My old squadron is one of the airborne firefighting (MAFFS) units. I don't know if any if that jerky made it to them, but good for you to make the request and then the delivery. I'm quite certain it was much appreciated by the firefighters.

    I'll second (or third) what everyone else has said. Vac pack with no extra liquid. I've started using the leftovers for some interesting experiments. I've made carnitas and tamales using leftover pulled pork. So that's another reason (for me) to not add extra liquid.

    I know for some the late night wake ups are part of the process to be enjoyed, but we have an infant son-I'm all about making it as simple as I can. I'm happy to get 4-6hrs of smoke then wrap in foil and put in the oven on low overnight -when its done it goes in a cooler to rest until chow time.

    There's also nothing wrong with smoking "hot and fast". I've been experimenting with that myself and the results have been pretty decent. The beauty of smoking meat is that even the mistakes are pretty delicious.
