They were actually perfect to me.  They weren't "falling off the bone" or falling apart but my idea of "perfect" is very tender meat that (for the most part) "cleanly"...

    No mopping at all.  I just used the apple juice and sealed it in foil.  With it sealed up there was more than enough moisture to keep it from drying out - in fact when I opened it back up there was probably twice as much liquid than the amount of apple juice I poured around it (about 10 oz)...
