I did say baby backs but they were cut very thick. I didn't think they were dry - maybe the picture of the cut up meat for my kid looks dry to you? I knew baby backs were 2-2-1 (commonly) but I don't think they would have been close to done. My local Sams club has them thick like this all the...
After reheating the ribs as leftovers last week in the oven/low temp, they were even better (in terms of doneness of the meat. They were actually perfect to me. They weren't "falling off the bone" or falling apart but my idea of "perfect" is very tender meat that (for the most part) "cleanly"...
Thanks for the comments everyone. I might as well share a couple funny happenings from Sat. night...
It kind of turned into one of those parties that, oddly enough, nobody was snapping pictures and... it was probably a good thing...
Two ladies that became very bitter towards one another last...
After my first cook http://www.smokingmeatforums.com/t/126630/first-smoke-in-new-wsm-ribs-undercooked-or-overcooked#post_851626 I decided to try my first Boston Butt.
We had a little end of the summer get together with several neighbor families on Saturday evening so Friday night around 11pm...

Replaced/returned my first smoker after a couple cooks because of thermometer/control unit issues. Bought a Weber Smokey Mountain 22.5. First attempt was yesterday. Was around 260 range the whole time give or take 10 degrees. Did 3-2-1 but went about 20 minutes extra on the 2/foil...
Dave, I had the MES in might sights when I first started looking for a smoker but after seeing reviews on Amazon I think I'm going to pass. I know there are a ton of people that love them/make great Q but there are a considerable number of people who loved theirs until they stopped running too...
Bought a Cookshack knock off (Smokin-It #3). Temp control went crazy from 2nd smoke on. Owner offered a full refund and I took it. Now I'm leery of another knock-off such as Smoking Tex and the only Cookshack in my price range is about half the size of the knock-off I start with.
This was my...
Thanks Flash.
I never really grew up around BBQ so when I saw it I gave it a try and liked it. Next time I'll probably try my hand at making my own rather than relying on the Colonel! LOL
No mopping at all. I just used the apple juice and sealed it in foil. With it sealed up there was more than enough moisture to keep it from drying out - in fact when I opened it back up there was probably twice as much liquid than the amount of apple juice I poured around it (about 10 oz)...
