First Brisket Attempt

Put rub on and vacuum sealed into refrigerator overnight, pull it out a 6am and let it rest at room temp till 7:15 was at 50F, put it into the smoker

9:45 123F
10:30 142F
11:30 160F
1:50 169F
2:20 175F
3:10 190F

Wrapped it in foil and then in towels and into the cooler after 2 hours too hot to handle, took it out after 3 hours

It had good smoke flavor but it seemed a little dry
