Hello Smokinellis, noticed this thread and darn if there weren't any posts. I have had an Oklahoma Joe smoker since last Father's day. My son got it for me. It has been a very good smoker. Before it, I had a Brinkman which was my first smoker. Made lots and lots... did I say lots of ribs on it. That's what my family has really enjoyed. On the Oklahoma Joe, made ribs, chicken, more ribs, pork, and finally a second brisket. I have posted pics of the brisket on my page here. The biggest thing for me has been picking up a wireless thermometer, got it from Wally World to cook my second brisket. Made a huge difference. I like the stick burning myself, others like the pellets or pucks. For me, it is all about enjoying a day, working in the yard or whatever else I want to do while the smoker is rolling. If you have questions, albeit, this is a long time after your original post, ask away!!
I have a OJ offset stick, and have loved it thru the pandemic.
A few leaks as I could have put it together with a little more care,
but overall holds some goods temps from 225F up to 325F.
Good heavy unit for $300 but feel like on colder days its hard keep temp up.
I really do enjoys spending the day making a fire, feeding the smoker,
drinking beers, and such, but sometimes things get in the way
like weather or such that keeps me from spending 5+hrs outside
maintaining the pit. Also wanting the connivence of not making
a fire for a short smoke piece of meat makes me want something a bit more hands off.
Hence the need for a pellet smoker.
I ordered one from walmart ont he black friday deal,
a pitboss pellet 700 sqin for $300.
hopefully it runs simple enough thru the winter weather for some short
smokes, that get finished in the oven.
