    Chicken , Sausage & Shrimp gumbo

    1c flour
    1c oil
    2 c onions (diced)
    2 c bellpepper (diced)
    1 1/2 c celery (diced)
    1 lb sliced okra
    1 lb smoked sausage (1/2 " slices)
    1 smoked chicken (deboned and cubed)
    1 1/2 lb shrimp (cut up if lg shrimp)
    2 qt chicken stock
    1 tsp oregano
    1 tsp basil
    salt and pepper
    1 tbsp vinegar

    Let's cook
    In a skillet ,Brown the sausage and set aside pour out any grese but don't wipe the skillet ....

    Here is a copycat recipe for zatirains seasoning
    Ingredientstable salt, 26 oz cayenne pepper, 5 tbs black pepper, 3 tbs onion powder, 3 tbs garlic powder, 3 tbs chili powder, 3 tbs thyme, 1 tbs sweet basil, 1 tbs bay leaf, 1 tbs grind all ingrediants except salt in food processor. Add the salt and mix well.

    This is the recipe for Tony Chachere's cajun seasoning in the green can that most of us use.

    1-26oz box of salt

    1-1/2 oz fine ground black pepper

    2 oz cayanne pepper

    1 oz garlic powder

    1 oz chilli powder

    1 oz msg (accent)

    Mix well and use like salt.

     when it's salty enough, It's seasoned to perfection.
