  • My son has Salmon fillets he would like me to smoke. He has more confidence in my ability to not make them inedible than I do. Help??

    Hey - i found a great Youtube video on this. Basically pack the filets with rock salt and brown sugar (equal parts) and brine for 24 hours. Rinse, let product air dry for 4 - 5 hours, smoke for 3.5 at 240, then smear with liquified apricot jam and red pepper flakes, smoke for another 30 minutes. Enjoy
