Last weekend I made wings. First I started by making a bribe consisting of 2 parts brown sugar to 1 part salt, water, wheat beer and picketing spice. It stayed the brine for 48 hours. Once out I rinse them off and put on my homemade chicken rub. Smoke them with alder wood pellets on my Masterbuilt smoker for 1.5 hours at 250 degrees. Then crisped the skin up in a 400 degree over for 10 mins.
Out of the oven then I sauced it up with my homemade hot sauce and enjoyed great wings.

I would never have thought to use pickling spices in a brine for chicken.

Your wings look great!! How did they taste with the pickling spices? Never tried that before and am going to smoke 5 lbs wings for my super bowl party.....along with a few slabs of ribs!!!
 
They taste great. I use Pickering spice in all my brines. I use about 1/4 cup.
