Last weekend I made wings. First I started by making a bribe consisting of 2 parts brown sugar to 1 part salt, water, wheat beer and picketing spice. It stayed the brine for 48 hours. Once out I rinse them off and put on my homemade chicken rub. Smoke them with alder wood pellets on my Masterbuilt smoker for 1.5 hours at 250 degrees. Then crisped the skin up in a 400 degree over for 10 mins. Out of the oven then I sauced it up with my homemade hot sauce and enjoyed great wings.
