Wild hogs sausage fat ratio question

  1. I going to try a wild hog sausage.  I've trimmed off all the hog fat and will add beef fat.  At what ratio do yall think? 50/50

    I think I would use pork fat.

    I would go with 75/25 depending on what type of sausage

    Either will work fine in the porker ... needs to be about 25% fat for sausage, 20% minimum.  7.5# extra lean meat and 2.5# of added fat.

  6. I like it with beef sausage, but I thought it overpowered my pork sausage.
