Weekend BB Rib Smoke w/ Q View

    I hope everyone had a great Memorial Day Weekend.  I took some extra time off and wanted to share my rib smoke from Friday.  Started off with some bb's and Jeffs Rub, as well as a half of head of cabbage with some beer and butter

    TBS- running at about 220-225 with lump and a hickory/pear mix of chunks

    While those  were cooking I cleaned up some apps

    WoW those ribs look good and your little testers are all ready to dig in I bet. Now I haven't ever seen your little setup on your weber grill before. You might want to show that of inthe build section here.

    Mballi- that is basicly a metal plate cut to match the curve of the kettle and lid.  It slides between the grate and keeps the coals and lots of the heat to one side.  when you put the lid on with the vents on the opposite side from the coals it creates a "convection" situation with your heat and smoke.  works really well and only cost me a couple bucks to do.  I originally wanted to use a pizza stone, but it wasnt big enough to do what I wanted.  I also added a grate level thermo to get a better handle on temps.
