Did a brisket and rack of spares for my wifes birthday yest. While trimming up the ribs I guess I pondered anatomy too much. Anyway a few definitions came to mind:
Flap meat: A portion of the hogs diaphragm.
Membrane: Parietal pleura, the lining of the chest cavity upon which the visceral pleura (covering of the lungs) rides.
