Smoked my first fatties tonight and decided to do 2. One for me and one for the rest of the family. I used a pound of Hot Jimmy Dean Sausage and a pound of ground venison mixed together. After getting them rolled out I coated with pizza sauce up to about and inch of the edges and then added mozarella cheese, mushrooms, spinach and jalepenos and rolled up and wrapped with bacon and seasoned the outside with Italian Spices and red pepper flakes. Smoked at 230 degrees for about 2.5 hours. Here are the pics... Going in Coming out Sliced I was very impressed. They were GOOD.
