Here's my smoked menu thats about to get started. Got the smoker fired up, waiting for the tbs to start rolling so I can get everything throwed in. Everything is being smoked w/ cherry. First time doing abt's, the beans and cherry. More to follow, enjoy!
The main course is bb's rubbed w/ my own rub

The sides are my bbq smoked beans, and some abt's stuffed w/ cream cheese, green onions and sharp chedder cheese (also makes a great topping on bagels!)



If anyone's interested in the beans recipe, it's pretty simple. I made a double batch of my drunken bbq sauce (it's in the sauce section) steamed 3 lbs of butter beans, chopped up a full pack of bacon and threw into a large pan and cooked until almost done (will finish up in the smoker) and threw on top of the beans, next diced up a medium yellow onion and sauteed in the bacon grease until translucent, threw grease and onions into the dish w/ beans and bacon, then topped w/ my bbq sauce. Mix everything up, then throw into the smoker for 3 hours.

Thanks everyone. It's been a little bit of a pain cause my ABT rack completely blows!! I had 2 of them fall out of the rack, so it might be in for a little "modifications". I think next time I'll just halve them and throw them in. Since the smoker is loaded, temps were a little bit of a problem at first. I'm not used to running the smoker w/ the gas on medium! Normally on low, the temps are run high, but w/ the combination of the loaded smoker and 13* temps, I have to re-learn how to use the smoker. I got it running around 221 right now. It's a little low, but it's close and I should be able to get it dialed in by ajusting the damper a little more.
 
I pulled the beans and the ABT's and all I have to say is they are freakin amazing! The beans are in the cooler staying warm, and I'm having a hard time keeping my hands off the ABT's until company gets here. My wife and I split one and now I know how crack addicts feel (in no way do I condon the use of drugs!). I'll post another qview here in a bit as I forgot to snap off some of the beans. Here's the ABT's
 
Sorry for the delay, here's a qview of ribs. I forgot to get a pic of the beans, but they turned out great! I will definately be making them again in the future.
