Sunday Brisket

    Smoked a nice 13 lb Brisket this Sunday on the WSM. I smoked it over hickory at 225 deg. 

    It probed as very tender at about 202 deg IT so off it came to rest in heavy towels.


    Served it to a group of about 10 people and don't have a single piece left.

    Looks great! Was that a full packer or just the flat?
