Sunday Beef Ribs, CB and Dried Beef Q-view

    Dug out a pack of frozen beef ribs last night and just put them on the WSM for dinner tonight. Will be doing the 3-2-1 method.

    Also, finished curing my CB and dried beef (thanks to Bearcarver's step-by-step). First cures I have ever done!

    CB and Dried beef after 12 days of cure with TQ and brown sugar. Rised, dried, sprinkled with CBP, onion powder and garlic powder. Left unwrapped in the fridge overnight and into the Big Chief with hickory this morning


    After 3 hours when I opened it up to steal my Maverick 733 back


    Beef ribs thawed and unwrapped


    Rubbed with Cattle Boyz Qriginal sauce (great sauce from Okotoks, AB) and Jeff's rub.


    Onto the 18.5" WSM with hickory chunks

    One of my CB's reached 145 in the Big Chief, so I opened up to check them all. Probed @ 145, 142, 141 so, I put them all in the WSM with my ribs and potatoes and got them all to 145*F minimum within 15 minutes.

    Brought them inside and cut a couple of pieces to taste (YUM [​IMG])

    Left the dried beef in the Big Chief to dry out some more. Will transfer them to the WSM after dinner to finish off.

    Unwrapped beef ribs from foil. Time to reform that bark!

    Ribs were delicious. No leftovers from the two of us.

    Smoked potatoes were a little hard, longer cook or higher heat next time. [​IMG]

    Dried beef came to 156*F and 158*F IT's right when dinner was done, so those are out to cool off before two day R&R in the fridge. Will post slicing and packing pics of CB and DB when it's time.

    CB and dried beef - Sliced, portioned and packed. Did the best I could by hand.I have lunch meat for 5 weeks packed away in the freezer.

    Had a dried beef sandwich today and it was awesome!

    Can't wait to fry up some more of that CB as well.

    That Dried Beef is even better when you can slice it paper thin, but you did a good Job for Hand slicing!![​IMG]

    Do yourself a favor,get a slicer if you can. Its not just for meat..

  16. WOW...this looks great. I have mine in the refrigerator with TQ and brown sugar on. It comes out on April 17 for onion garlic and pepper then the next day on the smoker...hope mine turns out as good as yours looks
