I seen this recipe on TV rew yr back, so I can't take credit for thinking this up. I'm not that smart. Lol. Anyway the players are, smoked xx-sharp cheddar and blue cheese, chicken thighs, bacon, jalapeño's and red onions. I boned and skinned the thighs and pounded them out and seasoned with some rub. Chopped up the onions and jalapeño's cubed up the cheese. I used a glass bowl for the form, and lined it with the bacon Added the chicken thigh and other goodies. Grabbed the ends of the bacon, and wrapped them up securing them with a few toothpicks. Onto the pellet smoker @225* for 1 1/2 hrs. I took them off while the grill headed up to 500* and then put them back on for a few minutes to crisp up the bacon. Great smoke flavor, the blue and chedder along with the jalapeño's and onion was a great mix of flavors.
