For a low/slow cook should I plan on longer and if so how much? I mis-communicated with the butcher and got spareribs by mistake.

I plan about (1) hour more for spares vs BB ribs. I do mine with no foil, and pull either variety based on pullback, appearance, and how they do on the tong test.

bb's: 4-5 hours
spares: 5-6 hours

Hi there Dan you got spares and you want the smoing time for them.??? I would smoke them at about 230-240 for the 3-2-1 and you should be just fine. You could lessin the times if you want to. I use it 3-1.5-1/2 unless I was puttin sauce on them then I do the last runn the full hour.
