Smoking Whole Chicken

  1. I'm doing my second smoked chicken today, first one turned out great.
    I spatchcocked it and brined it over night. I dried it and rubbed it and now its hanging out with the drumsticks in the fridge for another hour until I'm ready to start smoking it.
    Does anyone have a preference on breast side up or breast side down during smoking? Last time I kept the breast side up

    Breast side up for me.

  3. I've only done it breast up, but I can't complain based on the results.

    Down for the first half, up for the 2nd half.
