Smoked my first batck of saugage yesterday and it was a success, b ut i'm less than satisfied with the seasoning. I used a commercial pre-mixed seasonig and have decided to make my own.

Can someone post astarter recipe that i can tweek.

I'm not looking for a hot recipe, just one that has a good all around flavor to it.

Simple but good.. this is old German recipe from a friends great grandfather circa 1850's

50 lbs. Meat

5 oz black pepper = 1 oz per 10 lbs

1-1/4 lb salt = 4 oz per 10 lbs

½ teaspoon saltpeter (cure)

2-½ teaspoon garlic powder

1/8 oz red pepper

1-set casings for 50-60 links
 
for 10 lbs polish sausage

2 cups ice water

2 cups soy protien concentrate or non fat dry milk

5 tbs kosher salt

1 tbs sugar

2 tsp cure#1

1 tbs black pepper

2 garlic cloves

1 heaping tsp marjoram

10 lbs pork shoulder ground
