Even though I lost my father over 20 years ago my family still gets together for dinner on fathers day for a meal. This year I did a prime rib. It was always one of my dads favorites. This was smoked over hickory on my WSM @ 275 deg to an IT of 125 deg. it rested in my hot box for 1 1/2 hours. Temp rose to an IT of 128 during the rest. And a shot of the sliced product. It was fantastic.
