Pig tail terrine

    Got some pig tails from my farmer. We make aspic a lot, but I thought I would try a different approach.

    It cooked for 6h , very little liquid left.

    This here is a "byproduct"....the tails had a lot of fat on the a$$ side. So I call them a$$ chips.

    I'd have to eat some of that if it were available!  Most of my immediate family turns their nose up at aspic and most anything gelled, but me and my old man love it!

    A$$ chips, I like that!
