Hello all. I've been lurking for a while (to my great benefit) and thought I would join to have the opportunity to thank the forum and the fine folks that share their, experiences, tips, and recipes. Though I have not used the SMF as my only source of smoky information I can truthfully say it has had the most impact on reducing the steepness of my smoking learning curve, especially on my new MES 30 smoker. I live in southeastern Indiana, mid-sixties, and have always enjoyed grilling. A couple of years ago, I thought I would try my hand at smoking. So, I made and modified a tray for wood chips for my Holland grill. Had some good smokes (and some not so) but to hard to control temps below 250 so limited to what I could do to say the least time consuming,(constant attention with any wind) but I was hooked so here I am. Thanks for having me and good smok'in
