Just a backyard griller looking to get into smoking. Had been thinking about a pellet grill and followed another forum for a while until I realized I'd probably skipped a crucial step...learning the process of tending a fire, and understanding the basics. So I'm forgoing the pellet grill for now and have just added an offset smoker (converted my cheap charcoal griller) to learn on. Still use and love my Broil King gasser, but just want to learn some smoking basics.
I plan to sign up for the 5-day course and look forward to interacting with everyone as soon as I can understand the lingo and study some basic techniques.
Experience: Gas grilling, charcoal grilling, open fire, dutch ovens...but lost in a kitchen.
Desired outcome: learning to barbeque and enjoying some smoked food; buying new clothes one size larger than I wear now; and making my neighbors crazy jealous.
